What is a gluten free diet? It arose from a special menu for people with celiac disease (gluten intolerance). Now, this type of food is chosen not only by those who are faced with problems of the gastrointestinal tract. If you have not tried such a menu or doubt your decision, then tochka.net talks about what gluten is, why you need a gluten-free diet and what foods with this type of food are allowed and forbidden.

Note that although the name seems to be very complicated, sticking to this type of food is as easy as shelling pears. The main thing is to abandon some products. Moreover, they do not belong to those without which it is difficult to imagine your life.

What is gluten free?

Gluten or gluten is a protein found in wheat, rye, barley, spelled and other cereals. This substance helps to form the dough for baking – it is thanks to it that during contact with water the dough becomes sticky and elastic.

It is believed that giving up products with gluten, you refuse fast carbohydrates. Namely, they most often become the cause of excess weight. The pluses of a gluten-free diet also include the fact that it normalizes the intestines.

Prohibited gluten-free foods

The list of prohibited foods with this type of food is not too long. You need to remove from the diet:

wheat flour, wheat flour baking, pearl barley (barley groats), rye and rye bread, oats and oatmeal, spelled.

Allowed gluten-free diet products

When switching to gluten-free foods, do not forget that such food can be harmful. For example, gluten is not found in carbonated drinks, candied fruits, chocolate, ice cream, chips and mayonnaise. But imagine how these products can affect your figure. But you can still tasty and, most importantly, it is useful to eat these foods:

Eggs, milk, meat and fish.

Gluten is not part of the muscle tissue of animals, since it is a vegetable protein. Therefore, on a diet you can safely eat any kind of meat (beef, chicken, lamb, pork), fish (salmon, salmon, cod) and dairy products (cheese, kefir, cream, milk).

Rice, Corn and Buckwheat

Any kind of rice – both white and brown – does not contain gluten. Buckwheat and other pseudo-grains (quinoa, amaranth, sorghum) are also safe in gluten matters, although they resemble cereals. In fact, this is grass. And corn, which is considered a cereal crop, is also safe and acceptable with a gluten-free diet.

Legumes

Red and brown lentils, peas, chickpeas, white, red and black beans in combination with vegetables and fruits become the main source of dietary fiber in the diet.

Nuts, Seeds, Vegetables and Fruits

On a gluten-free diet, you can eat any nuts, vegetables, and fruits. Diversify your menu with apples, carrots, dried fruits, mangoes, avocados and chia seeds. And any other vegetables and fruits will not be superfluous. By the way, ordinary potatoes or sweet potato can also be eaten.

Oils and animal fats

A gluten-free diet is not so strict. You can add butter, melted pork fat, coconut, olive, sunflower and any other vegetable oils to food.

How does a gluten-free diet affect digestion?

Various scientific studies suggest that by limiting the use of products that contain gluten, a person improves the condition of the gastrointestinal tract. Also, this type of nutrition has a positive effect on the body's immunity even in those people who do not suffer from gluten intolerance. This is explained by the fact that with the help of gluten-free nutrition the level of various microinflammations decreases and the number of beneficial digestive bacteria grows.

This is explained by the fact that such a diet, which is based on vegetables and fruits, can be called prebiotic nutrition. And prebiotics are the very food components that are not digested and are not absorbed in the upper gastrointestinal tract. At the same time, such components are still fermented by the microflora of the large intestine and stimulate its growth and vital activity.

Note that most studies suggest that the most positive effect of a gluten-free diet is observed only in those people whose body does not tolerate gluten. But if you don’t have such a problem, gluten-free nutrition still has a positive effect on the body, because you refuse baking, white bread, pizza. Thus you will achieve normalization of weight.
